Serranitos

"Serranitos" from Moro. I can't reccomend these too highly, so a rare recipe:

Stack up:
- toasted ciabatta or baguette
- a little olive oil
- slices of chargrilled sweet / hot pepper
- slices of flattened pork fillet, marinaded for at least an hour in smoked paprika, garlic and black pepper
- Serrano ham

Key is not to overcook the pork. They should be strongly flavoured, and very moist. Great with a glasss of Manzanilla.

pork on pork seems overindulgent, somehow... Seems so wrong - I presume it tastes so right??

It's great - think sausages wrapped in bacon but lots better
