What is Butterflied Lamb?

The leg of lamb is taken off the bone and laid out flat. Sometimes kept like that with skewers.

It does look a bit like a butterfly, but only in the same way that some stars look a bit like a plough.

How easy it is to butterfly the lamb - or is it best left to the buthcher to do? If we ever get our summer back, I fancy cooking it on the BBQ in an Ainsley Harriott style (but without the dancing and inane comments..obviously).

Always best to get the butcher to butterfly the lamb - looks very complex.

Other advantage is it makes it astoundingly easy to carve.

A variety of places.

Supermarket shopping is done mostly at Tesco, but also at the local Sainsbury's when I'm feeling lazy, or Waitrose for a few ingredients.

But I also get an organic veg box each week from Abel & Cole (see other posts for details) and use the local market for fruit and veg. the market is strong, and the prices are good, but keeping quality is an issue.

I buy as much as my meat as possible from the local butcher's in St Albans. The butcher's shop is great, and it's always open early in the morning, but the lack of parking means I don't go as much as I otherwise would.
