Lunch with friends

Eating outside because the weather was so nice - chilli with a baked potato, cheese and an artichoke salad

Salad recipe was requested, so here we go:

- Take a jar of artichoke hearts marinated in olive oil
- Chop them up, and add them and the oil to the bottom of a salad bowl
- Add the juice of one lemon, salt and pepper, then mix and leave for about 15 minutes
- Then add about 20 basil leaves, chopped, and some green, firm lettuce
- Toss, and shave plenty of parmesan on top
- Taste, and add more olive oil, lemon juice and salt to taste

And some elegant fairy cakes to finish
