what is your recipe for thai green curry? Does it have lots of impossible ingredients? are you still buying seasonally?

Thai green curry is dead easy. I use a tub of thai green paste from the market. Until I have a dishwasher I can't justify the extra washing up that making my own would generate!

I fry the paste in a little groundnut oil, then add the chicken. Stir fry hot for about 2 mins, then add the veg. Stir fry for another 2 mins, before adding coconut milk, chicken stock, fish sauce, soy sauce and a squeeze of lemon juice. Simmer for 5 - 10 minutes, and season to taste with soy / lemon etc.
