As someone who will be soon moving to and indeed living in Japan, do you have any Every Little Helps sushi recipes you can share with me, building on last night's sushi experience?

In terms of Sushi:

There are three main sections - I'll discuss them separately, with a few tips for each:

Buying
- Freshest fish
- Genuine Sushi Rice
- Good rice vinegar
- Wasabi essential

Preparing
- You can cook and cool the sushi rice in advance. Use a metal spoon to mix the rice vinegar in to avoid crushing the rice
- Very sharp knife for the fish
- You can try preparing lots of ingredients in advance and then having a sushi making party

Assembling
- Good to have a bowl of luke-warm water with some rice vinegar in to wash your hands
- Once assembled, try chilling for half an hour before eating
- Sushi rolling mats (as shown) are genuinely useful

Final tip - if you can't be bothered I wholeheartedly recommend ITSU on Wardour street. Fun and good without being too pricey, and a good selection of non-fish stuff for the unadventurous:
