A simple pasta dish

Olive oil and garlic

Chopped plum tomatoes. I cook them down for about 30 minutes until they are sweet and jam-like

Served with orecchiette

And with a nice, light lambrusco

Except that would be horrible, whereas this would be nice.

My favourite pasta sauce, I think, and yet also the cheapest. You can add a bit of red chilli for heat, or some halved cherry tomatoes at the end for a fresher taste.

Equally good with grilled meat or fish.
