Rhubarb fool with twice baked shortbread

Shortbread cooking - the recipe called for it to be 'twice baked'

So after an initial 30 minutes at a low heat It was portioned up, sugared and cooked again

Gave it a great texture - crunchy and crisp, with a delicious hint of chewiness

Served with a rhubarb fool

Rhubarb fool just because we had lots of rhubarb, the shortbread recipe was from the smittenkitchen blog
