Sam - glad you like the blog! I've got a great oriental recipe for belly pork, with plenty of five spice, and slow roasted over water so the bottom steams as the top crisps.
Jen - I cook at about 220 for 20 minutes to crisp it up, then slow cooked over potatoes for as long as I could - a couple of hours in this case. The fat all renders out and roasts the potatoes

You know on Sunday, we had pork belly too - salted and peppered, with butternut squash rice and oysterish broccoli. LOVE pork belly.
