I cannot agree with you on carrots, THEY RULE! and they also help you see in the dark. PLus you can do a million foody things with them!
Lets see, Carrot Cake (maybe you could finally bake a cake for us!), Carrot Soup, Roasted Carrots, Shredded Carrot for Salad (particularly good and different) not to mention Carrot Puree, Carrot and Swede Mash.
Don't make carrot soup... my grandfather always says he'd rather go to jail than eat carrot soup and I'm inclined to agree with him.
Mash them with potatoes - that's nice (also works with turnip or swede) - or roast them. Dunk them raw into thick home-made hummus. Boil them with sprigs of fresh mint.
Alternatively, if you cut grooves along the length of a carrot, then slice them, they look like little orange flowers and make a very attractive addition to boring salads. Maybe I should get out more...

(apparently if you just substitute beetroot for carrot in carrot cake it is nice!)
