Salads

Slightly badly planned meal. Chestnut, spinach and pancetta salad in an amazing sherry vinegar and mustard dressing

Followed by a Vietnamese steak salad. Good, but a bit too much salad in one meal! Posted by Picasa

Salad dressing for the chestnut salad is made by adding a tablespoon of french mustard, and then a tablespoon of good sherry vinegar to the rendered pancetta fat off the heat, and beating with a wooden spoon. It's definitely the best bit!
