Fried ricotta and herb cakes

Mixed ricotta, breadcrumbs, beaten egg, rocket, tarragon, parsley, salt and pepper

Shaped into small cakes, then shallow fried in sunflower oil

Drained and salted

Served with a mint and chive yoghurt, and a soft green salad

are those from last weeks observer?? we did them with goats cheese instead - really really good. especially with the cucumber thing. fyi also did the chicken thing on the next page.

It was indeed a Nigel Slater Observer recipe. Good, although could have done with a bit more 'zing'. Capers? Gherkins? not sure.

How was the chicken?

the goats cheese did add a zing and with the cuc yog was fab - great with cold salmon, also found that if you mixed the recommended yog thing with some mayo was great with SO many things!
