Relais de la Poste - 4

Pigeon, served rare, with vegetables and girolle muchrooms

It was pinker than I'd normally serve pigeon, but tasted wonderful. The sauce was typically French - a dark, smooth reduction which stood up to the gamey flavours of the pigeon.

Apparently this was a young pigeon, also referred to as a squab. Was tempted to ask for it on a stick, but not sure whether they would have got it. Posted by Picasa
